What’s up devils? Hopefully you’ve all had an awesome and productive week. Now the weekend is upon us, so it’s time to have some fun and enjoy ourselves. What better way to spend the weekend than barbecuing. If you’re not sure what to barbecue, then try our weekend barbecue challenge. Normally the weekend barbecue challenge has been all about meat, because meat is at the forefront of any good barbecue. But for this weekends challenge, I offer something a little sweeter, something to help you end the night right. I offer to you desserts on the grill. Try your hands at chocolate marshmallow bananas and grilled pineapple sundaes from delish.com for a sweet treat fresh off the grill.
Chocolate Banana Boats
Ingredients (written for 1 boat):
1 cup chocolate chips
1 cup mini marshmallows
Cut a 12 x 12 inch square piece of foil. Peel the banana and slice it lengthwise, going about 3/4 of the way in. Spread it apart and fill it up with mini marshmallows and chocolate chips, then tightly wrap the whole thing in the foil. Place it on your grill, direct heat, for about 5 minutes. Remove from the grill, unwrap and enjoy!
Grilled Pineapple Sundaes
4 slices of pineapple
4 scoops vanilla ice cream
Dulce de leche, for a drizzle
2 tbs. sweetened shredded coconut, toasted
Start by getting your grill to high heat, and cooking the pineapple for about 1 minute, or until charred. Then, top each pineapple slice with the vanilla ice cream and drizzle the dulce de leche (or a caramel topping) on top of the ice cream. Top with the shredded coconut and enjoy immediately.
